Soccarat — The crunchy bit at the bottom of a rice dish where the rice has slightly burned to the pan.
Socarrat is actually a Catalan word (in Spanish it would be chamuscado). It means burnt. So in this case it refers to burnt rice !

“Scarpetta” refers to the Italian tradition of using bread to mop up leftover sauce or gravy from a plate. It’s also the name of a chain of Italian restaurants, inspired by Italian cafes and trattorias. The term “scarpetta” literally means “little shoe,” referring to how the bread “picks up” the sauce like a shoe drags things.
